Prep cauliflower by cutting into florets. Slice onion into small pieces and strip thyme leaves from stems.

In a food processor, rice the cauliflower by pulsing until a crumbly texture is formed.

Add the onion, thyme, and collard greens into the mixture and continue pulsing until well combined.

Scoop the mixture into a large mixing bowl. Add cheeses, eggs, sesame seeds, olive oil, garlic powder, salt, and pepper.

Heat your waffle iron and spoon mixture into the waffle iron evenly. Cook until golden.
