Tomato Fish Stew

If using frozen fish, thaw and pat dry. Season fish fillets with cayenne, cumin, paprika, turmeric, and white pepper.

Prep vegetables. Mince garlic, dice red onion, and slice celery and red bell pepper into bite-size pieces.

Heat a large pot over medium heat. Once heated, add olive oil and red onion. Cook down onion for 4 minutes. Add minced garlic and saute until golden brown, about 2 minutes. Add celery and bell pepper. Saute for 2-3 minutes.

Add chicken broth and canned tomatoes. Add a shake of all the spices. Bring the pot to a boil, then let simmer for 20 minutes.

Add fish and cook until tender and flaky, about 5-7 minutes. Stir in rice vinegar and top with chopped green onions before serving.
