White Bean & Sausage Skillet
Smoked sausage, white beans, and wilted spinach in a light garlic-tomato broth, finished with Parmesan and lemon. A hearty, one-pan comfort meal.

Heat a large skillet over medium-high heat. Brown the sausage 5-7 minutes. Remove and set aside if it releases a lot of grease, leaving about 1 tbsp in the pan.

Add onion and cook 4-5 minutes until softened. Stir in garlic, Italian seasoning, paprika, and red pepper flakes. Cook 30 seconds.

Add beans, chicken broth, and diced tomatoes (if using). Bring to a gentle simmer and cook 5-8 minutes so the flavors combine.

Return the sausage to the skillet. Stir in spinach and cook until wilted, about 2 minutes.

Remove from heat and stir in Parmesan and lemon juice. Taste and season with salt and pepper.
